tomato and tofu salad

tomato and tofu salad 

dressing- mix together
2 teaspoons soy sauce
a few drops of toasted sesame oil
a splash of sherry vinegar
2 tablespoons olive oil
sea salt and black pepper

tomatoes- sliced or chopped (cherry tomatoes cut in half if using)
3-5 slices of firm silken tofu or very fresh tofu of your liking
1 tablespoon toasted pine nuts
2 spoons of pesto
* David Chang's recipe calls for shiso leaves instead of pesto- use whatever you like for garnish 

Assemble salad-
Toss dressing lightly with cut tomatoes. Arrange tofu on a serving plate and top with tomatoes, pine nuts, and pesto.
